One of the best I've ever read is SPIKE LEE'S GOTTA HAVE IT: INSIDE GUERILLA FILMMAKING, by Spike Lee. Kinda hard to find, though.

John Russo's MAKING MOVIES is awsome, but pretty dated (only deals with film and shuns video).
